Also, I have their 1/350 Type XXI, very nice kit...

If you mean in 1/144 scale range then Academy's 1/150 IXB is your best bet (would require a lot of scratchbuilding  under the waterline and some detailing to make it look decent).
Both Nichimo's Type IX (in 1/200) are also great kits.

What i would like to see is Revell releasing 1/72 Type IXC and Type XXI that would be bomb! :D
