There are many different and interesting U-boat color schemes. Some of my personal favorites are the white-painted Arctic boats. U-255 and U-601 are good examples of these. The defunct German company ULAD had three excellent quality 1/72 decal sheets, with many interesting insignias. Sometimes they show up on eBay, or some forum members here may have some they would part with.
The problem with the Peddinghaus decal sheets is that many of the decals are not to scale (oversized) and some of them are just plain wrong. For example the 11th Flotilla insignia on their sheets features a red background, which is not accurate at all (the correct color was blue).
Another, the "Wild Donkey" insignia of U-338 is supposed to be a white outline. Instead the Peddinghaus version is solid white with a black outline. Or including U-255's fox cap insignia as a conning tower marking. Completely out to lunch.  Some are useless, like the ones included for Type XIV U-tankers. There are AFAIK no 1/72 scale kits in existence of those boats. Some of the Peddinghaus decals are decent, but all the bad ones makes for a real mixed bag.
However, other than the kit-supplied decals, there isn't much else out there at the moment. If you do pick up some of them, do some research before using the ones for a particular boat..
